Ingredients

  • 7 ounces graham crackers
  • ¼ teaspoon salt
  • ⅓ cup avocado oil
  • 2 (8-ounce) packages cream cheese
  • 1 cup part-skim ricotta cheese
  • 1 cup non-fat plain Greek yogurt
  • 1/2 cup confectioners’ sugar
  • 1/4 cup honey
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 16 ounces fresh strawberries (sliced)

Instructions

  1. Grind graham crackers and salt in a Vitamix* or food processor and pulse until finely ground. Keep the motor running very low and slowly pour in the oil. Stir until well combined.
  2. Lightly oil a 9x13-inch casserole dish with a few drops of avocado oil. Press the graham cracker mixture evenly throughout the bottom of the dish.
  3. Rinse the Vitamix or food processor, then add the cream cheese, ricotta cheese, yogurt, confectioners' sugar, honey, lemon zest and lemon juice. Puree until smooth.
  4. Spoon the mixture over the crust and spread evenly throughout the pan without disturbing the crust. Cover and refrigerate for at least 2 hours so that the mixture sets.
  5. Top with berries right before serving.
