Did you know that out of all the foods in the American diet, eggs are the most concentrated food source of choline, an essential nutrient for brain health and muscle control as well as mood and memory regulation? These kid-approved Dijon Deviled Eggs offer a tasty way to get your daily dose of choline.

Ingredients

  • 12 eggs
  • 1/4 cup mayonnaise
  • 1/4 cup plain, full-fat yogurt
  • 2 tablespoons Dijon mustard
  • 1 tsp cocktail sauce
  • 1/2 teaspoon Kosher salt
  • 1 scallion (trimmed and finely chopped)
  • Ground black pepper (to taste)
  • Smoked paprika (optional; garnish)

Instructions

  1. Place eggs in a large pot, cover with cold water and bring just to a boil over medium-high heat. As soon as water is boiling, reduce heat to low and simmer for 14 minutes.
  2. Transfer eggs to a bowl of ice water and let sit for at least 10 minutes or until eggs are cooled completely.
  3. Peel eggs and slice in half length-wise. Pop yolks out of the whites with a small spoon into a medium bowl and set aside, placing the whites onto a serving platter.
  4. Add all remaining ingredients into the bowl with the yolks (except for paprika garnish) and mix, mashing the yolks with a fork and stirring mixture until well combined and uniform throughout.
  5. Spoon the yolk mixture evenly into the egg white halves with a small spoon or piping bag. Garnish with a sprinkle of paprika across the top and serve immediately, or store for up to 2 days in the refrigerator in an airtight container.
