Offering the top 9 allergens early and often to babies may be one of the best (and only) tools we have to help prevent the development of food allergies. But shellfish (a top 9 allergen) can be challenging, since foods like shrimp if offered in their whole cooked form would pose a choking risk. Finely chopping shrimp and cooking them into fritters is an excellent way to offer shellfish to babies in a food they can easily grasp and self-feed during baby-led weaning. Feel free to substitute an equal amount of fish (cod fish works well) or crab instead of shrimp and be sure to smash the corn kernels and omit the salt if preparing for a baby under the age of 1.

Finely chopping shrimp and cooking them into fritters is an excellent way to offer shellfish to babies who are at least 6 months of age and showing the signs of readiness for solid foods. Strips of these sliced Shrimp and Vegetable Fritters are easily grasped and self-fed during baby-led weaning by babies using a palmar grasp.

Ingredients

  • 1 cup 100% whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt (omit if making for an infant under the age of 1)
  • 1/4 teaspoon pepper
  • 1/4 cup milk
  • 2 eggs (beaten)
  • 1 pound medium shrimp (cooked, peeled, deveined, and finely chopped)
  • ½ cup cooked corn kernels (smashed)
  • ½ cup red bell pepper (minced)
  • 2 tablespoons onion (finely chopped)
  • ¼ cup fresh parsley (finely chopped)
  • Vegetable oil (as needed)

Instructions

  1. In a medium mixing bowl, combine flour, baking powder, and pepper and mix.
  2. Add milk and eggs and stir to combine. Add shrimp, peppers, smashed corn, onion, and parsley. Mix well so that ingredients are blended evenly throughout.
  3. In a large frying pan, heat about ¼ inch of vegetable oil to about 375°F.
  4. Carefully drop spoonfuls of batter into the hot oil cooking only a few fritters at a time, flattening with a spatula and turning once halfway through.
  5. Fry until fritters are lightly golden brown on both sides (about 2-3 minutes per side), then remove from oil and drain well on a plate lined with paper towels before serving.

Notes

  • Working with raw shrimp will add 5 minutes to your cooking time. To cook shrimp, saute in a non-stick pan over medium-high heat for about 5 minutes.




  • Foods like shrimp offered in their whole cooked form can pose a choking risk, chop shellfish finely!


  • To make an optional dipping sauce, whisk 1 cup sour cream with the juice and zest of 1/2 a lemon, 1 teaspoon of garlic powder and 1 teaspoon chopped parsley. This usually only takes about 5-6 minutes to make and tastes amazing with the fritters!
